Catering students cooked up a storm at The Gallery Restaurant, preparing a variety of delectable dishes using only Fairtrade and organic produce, as part of ‘Fairtrade Fortnight’.

An outstanding £1,000 was raised for two charities with excellent causes – ‘Send a Cow,’ and ‘Second Helpings’.

Send a Cow seeks to help lift families out of poverty in Africa for good – not just a few years – with farmers working collaboratively, learning how to make a living from the land.

What’s more, Second Helpings is a community cafe in Stamford, established to intercept perfectly good food from local supermarkets and restaurants, etc., that would otherwise go to waste.

The menu featured a variety of mouth-watering ingredients and included mushroom cappuccino with savoury palmiers; free range chicken supreme, barley risotto and wilted spinach; a warm salad of beetroot and roasted vegetables; gruyere soufflé; gateau opera; Fairtrade coffee and petit fours.

“It’s an excellent opportunity for our students to take part and get involved with charity work, it’s a fine dining experience so there is plenty of assessment opportunities for them” – said Senior Catering Technician, Lucy Wood.

“Our suppliers that we use for our service and skills lessons gave generously again this year, including Stilton Butchers, Direct Seafood, Eureka Produce, Peterborough Dairies and Thomas Ridley. They were sent a copy of the menu and the charity information and donated goods/ingredients and fresh products for us to use that evening. Special thanks for their continued support.”

Jane Beynon, one of the beneficiaries of this cause, joined Jane Bateman, George and Jan Hetherington in the presentation of their cheque, with all proceeds going to both charities.
