A commis chef is the most well-known starting position in many kitchens. You will prepare food and carry out basic cooking tasks under the supervision of a Senior Chef. You will gain hands-on experience within the workplace, undertaking tasks to develop your culinary, food safety and communication skills. You will also look at aspects of business including; understanding basic costing and yield of dishes, understanding the principle of the supply chain and waste management, and recognising the potnetial risks in the working environment and how to address them.

This course is approximately 80% work and 20% training.


You will be employed as an apprentice for at least 30 hours a week. You will have a workplace mentor who will be responcible for your training and welfare at work (in this instance a senior chef). You will attend college for classes as required. An assessor will visit you in the workplace to assess your progress against standards and set SMART objectives.

On completion, you will be fully competent as a Commis Chef and able to progress to the Senior Chef Production Apprenticeship Level 3.

Individual employers set their own entry requirements. However, you will typically require 5 GCSEs at grades 4/C or above including English and maths.
